Mutton chops

It is a traditional mutton recipe prepared always at home.It is a recipe I learnt from my aunt , who is a very good non-vegetarian cook.

Ingredients

  • Mutton - 500gm
  • onion - 1 medium sized sliced
  • green chillies : 4 nos ( sliced)
  • oil - 3tbsp
  • salt - as per taste
  • turmeric - 1 pinch
Grind to paste
  • Garlic cloves - 15 nos
  • Ginger - small piece (25%of garlic quantity)
  • peppercorns - 12 nos
  • coriander leave - 1 small bunch
  • cinnamon - 1 small piece ( I use the cinnamon and clove powder)
  • cloves - 3-4
  • Green chillies - 5(you can also add chillipowder and reduce green chillies)
Method

  • I always cook mutton in pressure cooker before making any mutton dish.
  • heat oil  in cooker , add little onion,mutton , turmeric powder and fry for 5 mins , add water (required to cover mutton) and cook for 2 whistles.( any number of whistles till mutton is cooked)
  • Heat oil in a vessel add sliced onion and fry till translucent and add grinded masala and fry for sometime.
  • Add the cooked mutton and also mutton stock (as much required for curry ) and close a lid and cook for 5-10 mins on low flame.
  • once you can see oil separated on the surface of the curry, remove the lid and cook on medium flame till it reaches a gravy consistency.
  • serve with chapathis and rice.
