Ingredients
- Mutton - 500gm
- onion - 1 medium sized sliced
- green chillies : 4 nos ( sliced)
- oil - 3tbsp
- salt - as per taste
- turmeric - 1 pinch
Grind to paste
- Garlic cloves - 15 nos
- Ginger - small piece (25%of garlic quantity)
- peppercorns - 12 nos
- coriander leave - 1 small bunch
- cinnamon - 1 small piece ( I use the cinnamon and clove powder)
- cloves - 3-4
- Green chillies - 5(you can also add chillipowder and reduce green chillies)
Method
- I always cook mutton in pressure cooker before making any mutton dish.
- heat oil in cooker , add little onion,mutton , turmeric powder and fry for 5 mins , add water (required to cover mutton) and cook for 2 whistles.( any number of whistles till mutton is cooked)
- Heat oil in a vessel add sliced onion and fry till translucent and add grinded masala and fry for sometime.
- Add the cooked mutton and also mutton stock (as much required for curry ) and close a lid and cook for 5-10 mins on low flame.
- once you can see oil separated on the surface of the curry, remove the lid and cook on medium flame till it reaches a gravy consistency.
- serve with chapathis and rice.
