A vegetarian rice recipe which I have learnt from my mom


Ingredients:
It serves 3 people
Ingredient
quantity
Jeera sambar rice /normal rice
1 1/2 cups i.e  250 gm
(You can also use normal rice along with jeera rice in the 1:1 ratio)
Mint leaves / methi leaves
 Few strands
Water
3 cups
Salt
As required
Onions
2 medium sized sliced
carrot ,
beans ,
avarekayina hithikida bele,
tomato (1 big)
As required, cut into medium sized pieces
Green chillies
5
Ginger
½ inch piece (cut and crushed)
Garlic
8 cloves (crushed)
Turmeric powder
A pinch
Oil
4 tbsp
Cinnamaon and clove powder
1 pinch
bay leaf
marathi moggu
elaichi,
cinnamon, clove
1 piece each
Coriander leaves
 few strands


Method:

  • Heat oil in a thick bottomed vessel 
  • Add bay leaf /marathi moggu / elaichi/ cinnamon/ clove and onion and fry.
  •  Add the turmeric powder
  • Then add the vegetables,slit green chillies ginger , garlic and fry for 6-7 min.Add the green leaves,(methi, pudina, coriander leaves) and fry.
  • Wash the raw rice with water and add to the above mix and fry for few minutes and add water..Add salt as per taste .
  • Once the water starts boiling close the vessel with a lid and reduce the flame.Keep mixing the rice in between.once the rice is cooked serve it hot
