This was a recipe from my friend.
It is kind of semidry, which can used as a side dish for rotis or just like a palya.
Ingredients
Serves 4 adults
Salt – as per taste
Long green brinjals – 8 (medium sized)
Oil – 4tbsp (as much as required for brinjal to get cooked as we do not use water)
Vangi bath powder – 2tbsp
Chilli powder – ¼ tsp
Tamarind juice – 2tbsp
Onion – 1 small sliced
Curry leaves and mustard for seasoning
Procedure
- Slice the brinjal into thin long pieces and add it to water for 5 mins and keep aside.
- Heat oil in thick bottomed kadai and add the mustard and curry leaves and sliced onion and fry for 2 minutes.
- Then remove the brinjal from water and add to the above and add little salt and close the kadai with a lid.
- After few minutes add the vangi bath powder and chilli powder and tamarind juice and again close the lid and cook for sometime.After every 2 min keep mixing.
- Cook till the brinjals get cooked.
