Brinjal Vepudu
This
was a recipe from my friend.
It is
kind of semidry, which can used as a side dish for rotis or just like a palya.
Ingredients
Serves
4 adults
Salt – as per taste
Long green brinjals – 8 (medium sized)
Oil – 4tbsp (as much as required for brinjal to get
cooked as we do not use water)
Vangi bath powder – 2tbsp
Chilli powder – ¼ tsp
Tamarind juice – 2tbsp
Onion – 1 small sliced
Curry leaves and mustard for
seasoning
Procedure
- Slice the brinjal into thin long pieces and add it to water for 5 mins and keep aside.
- Heat oil in thick bottomed kadai and add the mustard and curry leaves and sliced onion and fry for 2 minutes.
- Then remove the brinjal from water and add to the above and add little salt and close the kadai with a lid.
- After few minutes add the vangi bath powder and chilli powder and tamarind juice and again close the lid and cook for sometime.After every 2 min keep mixing.
- Cook till the brinjals get cooked.
Cauliflower green curry
Ingredients
Serves
4 adults
Salt – as per taste
Oil – 2tbsp
Onion – 1 small sliced
Curry leaves and mustard for
seasoning
Cauliflower florets – 2 cups (cleaned
by soaking in warm salted water for 10 mins and washed in cold water)
Green peas – ¼ cup
To grind to a paste
Chilli powder – as per taste
Dhaniya powder – ¼ tsp
Clove and cinnamon powder – ¼ tsp
Coriander leaves – few
Ginger – ¼ inch
Garlic cloves – 6
Turmeric powder – 1 pinch
Green chillies - 1
- Cook the cauliflower florets along with green peas till it is cooked and drain the water and keep aside.
- Heat oil in a kadai and the seasoning and add the onion and fry for few minutes.
- Add the boiled the cauliflower and green peas and fry for sometime.
- Add the grinded masal and salt and fry for sometime.Add very little water and close the lid and cook for some time and serve it hot with rotis or as a side dish
Kadai Vegetables
It is a northindian gravy.It goes well with any indian breads like chapathi,roti etc

Dhaniya powder | ½ tsp |
Turmeric powder | 1 pinch |
Red chilli powder | 1 tsp ( as per taste ) |
Kasturi methi | Few strands |
Oil | 2 tbsp |
Butter | 1 tbsp |
Salt to taste | as per taste |
Water | As per consistency |
Coriander leaves | For decorating |
To grind to paste

Cashew nut | 10 pieces |
Tomatoes | 2 big |
Onion | 1 medium sized |
Method :
2. Cut also the capsicum into suare shaped pieces.
3. Grind the ingredients mentioned above to grind to paste and keep it aside.
4. Heat oil in a thick kadai and fry capsicum for some time and then add the boiled vegetables and fry.
5. Add the grinded paste (3) and add water and salt as required.
6. Add turmeric powder and dhaniya powder.
7. After 5 min add the garam masala and close the lid for simmer the stove till the oil separates out.
8. Add the kasturi methi and remove from the stove and serve by adding the coriander leaves on the top.
Mushroom fiesta
It is a very simple and easy recipe.It is a simple side dish . It is one my college days inventions.Which I tried @ my friends place when we had a SALAD group get together.My friend Lux named this dish.

Method:
1.
Heat oil in a pan, add little garlic and mushroom and salt and
fry. The mushroom leaves out water.
2.
Fry till mushrooms cooked and keep aside.
3.
Heat oil in the pan, add remaining garlic, onion and fry. add
green chillies, capsicum and fry.
4.
Add add mushrooms, spring onions, salt vinegar and soya sauce
and pepper powder and fry for 2 minutes and then serve it hot.
